Caribbean Chicken Salad

1 cup dry rice
2 cups cooked chicken, shredded
3/4 cup raisins
3/4 cup mango chutney
1/2 cup chopped celery
1 small onion, finely chopped
1 large pineapple
1/4 cup mayonnaise or enough for your liking
1 tsp cinnamon~
Orange twists
Sweetened cherries (from a jar).

Cook the rice, and then cool. Cut the pineapple in half, including the flower. Scoop out the meat and cut it into chunks Save the shells. Combine the pineapple chunks remaining ingredients and the rice. Mound into the pineapple shells and garnish flower with orange twists and cherries.
