Short ribs are a cut of beef taken from the brisket, chuck, plate, or rib area. They consist of a short portion of the rib bone, which is overlain by meat which varies in thickness. We take great pride in the fact all our beef sourced is from Gaindykehead Farm, Scotland. Our beef is traditionally dry hung for 28 days to guarantee tenderness and full of flavour.
